Description
On purpose, I don’t add a lot of flavor when cooking this dish. Instead, I let the hubby use good ol’ regular soy sauce on his portion, I add some coconut aminos on mine (as well as the Yuzu hot sauce I talked about here) and leave it plain for the kiddos to dress up as they like.
Ingredients
Scale
- 1 inch piece of peeled fresh ginger, finely diced (I usually do 2 inches)
- 1 medium onion, diced
- 2–3 cloves of garlic, finely diced (optional)
- 2 lbs ground turkey or chicken (I prefer organic)
- 2 bags of Cole Slaw mix (I usually try to find an asian slaw, as well as a rainbow or other fun one — but really, any slaw from cabbage/carrots/veggies will do just fine)
- 4 eggs
- Sesame oil
- EVOO
- Coconut Aminos
Instructions
- Heat a LARGE pan over medium heat. Add a turn (about 1 tsp) of sesame oil and 1 tsp of EVOO. When warm, add in your onions, sauté about 2 minutes. Then, add in your garlic and ginger and sauté until fragrant.
- Add your ground turkey/chicken to the mix. Stir and break up and cook until no longer pink. I will usually add a turn of coconut aminos here to give a hint of flavor.
- Drain any excess grease/liquid from pan. I usually use a paper towel to soak it up.
- Add your two bags of Cole slaw to the pan. Stir so everything is mixed up. Let cook for about 5-10 minutes, stirring occasionally.
- When the veggies are almost cooked to your liking, scoot them all to one side of the pan.
- Spray the open section of your pan with nonstick spray and crack in your 4 eggs. Scramble the eggs on the side of the pan, then when cooked, mix it all together. Serve!
- I top mine with the Yuzu Hot sauce I mention above. Hubs tops his with soy. Kids — well, that depends on the day! This is a fun dish to serve with pretty much any hot sauce.
